
“Why do you eat so much maggi, Nia?”
My friends always ask me.
And how do I answer? “Because I have the best makhni maggi recipe!”
It’s true. The recipe that I’ve created and recreated several times has been soul-satisfying for me. With just a dash of my secret ingredient, I turn maggi into a comfort food.
When Mumma says, “Aaj khana banane ka man nahi hai.” I say, “Can I make maggi, please?”
And that’s the beginning of our perfect way to say goodbye to a stressful day.
Without wasting any time, I don on the apron and trot into the kitchen. Picking up the pan, I quickly chop up some onions, capsicum, tomatoes, and garlic, and get to heating up the pan.
How to make Makhni Maggi: CookLikeIndian Style
The answer of “how to make makhni maggi as Cook Like Indian style” is revealed in the following steps:
- Heat up a pan or kadhaai
- Pour 1 teaspoon (tsp) of butter in it. You may also use refined oil in place of it. Do NOT turn the flame high.
- Add some finely chopped or crushed garlic, however you prefer. Pro tip: crushing the garlic helps extract all its flavors!
- Keep stirring the garlic until it’s golden brown (should take only 1-2 mins)
- Add finely chopped onions and stir
- Turn the flame to medium-high and keep stirring the onions so they don’t stick in the pan
- After they become golden brown, add finely chopped capsicum in it
- Once the capsicum and onions soften a little, it’s time to rain tomatoes!
- Let the flame as it is, on medium, and add salt + black pepper + oregano + chili flakes + pinch of turmeric powder + little bit of red chili powder
- Tear up a green chili or two from the middle, keeping the stem as it is and add them in the tomatoes mix
- Stir everything up and cover the pan
- Let the tomatoes do their magic and they’ll transpire water
- We need to get the tomatoes to a pulpy state, which will take about 5 to 10 mins. While this happens, stir the mix every couple of minutes.
- Now, in a separate bowl, empty the maggi masala packet which comes along with the noodles and add some water in it. Mix it properly to make a watery paste.
- Once the tomatoes and the veggies have cooked to the fullest, start mashing them using the spatula. You need to make a pulp out of the mix which will give a great texture to the whole recipe.
- Now, add the masala mix and drum rolls please… add 1 tablespoon of ready made pizza red sauce! It will lend a GREAT flavor to your maggi!
- Add 2 cups of water and maggi to it and let the noodles simmer for 3 minutes. Do not cover the pan while cooking noodles as the water won’t be able to escape in thin air and you will be left with overcooked maggi.
- If you like, this is the time to add some cheese as well! Once most of the water has been soaked up by noodles, add cheese and mix it up. Or, serve as it is!
